My brie and fig jam toastie to me is a bit like a poshed up grown-up version of a cheese and pickle toastie.
It is funny how our tastes change as we grow, develop and discover new things. The reason I decided to make a brie and fig toastie was because I have seen menus featuring brie and fig as a good mix – from both cheese plates to desserts. So, what more could I do than to give it a try. Especially as my friend Anne introduced me to the wonderful and ever so delicious Tiptree jams while I was down visiting her in Essex. It was this that gave me a taste for fig jam.
Seeing as we go out nice and early on Saturday mornings for our walks to and around the city, I like to make something that is simple, quick and delicious. That also doesn’t make too much mess of the kitchen too, as we’re usually likely to go out again later in the day.
When I popped these into the meal plan, I had wanted to get square bread. Ocado didn’t seem to have any and not wanting to have to venture out to a supermarket, I settled for my new discovery of square pitta bread. To be honest, I think it would have been better in bread, but I will use what I have. The only issue I found with the pitta was cutting it before toasting – so we had bits falling off or oozing when we were eating. A mere detail when you think of the deliciousness.
Ingredients:
Tiptree Fig Jam
Square Pitta bread
Vegetarian Brie, sliced
Method:
Heat your sandwich press or grill while you prepare the sandwiches
Slice the pitta and smear one side generously with the fig jam
Lay the sliced brie over the jam and place the other half of the pitta on top
Place in the sandwich press and cook for about 6-8 minutes until golden and gooey
(if using the grill, grill on one side for around 3 minutes, then turn and do the other side for a further 3 minutes on medium temperature)
For a warm picnic, wrap immediately in foil and pack into an insulated lunchbox
So, so simple, yet so delicious!
