If you get out and about in town or by car you are likely to have spotted the abundance of Taco Bell adverts for their Crunchwrap Supreme.  Curious and excited about the prospect of having crisps in a folded quesadilla (think the love child of a crisp sandwich and burrito!) I decided to give my own copycat veggie crunchwrap supreme a go over the Bank Holiday weekend.  If Bank Holidays aren’t for super-duper breakfasts, then when is?

I have to say that I was pleasantly surpsised at how tasty the crunchwrap is. There is the delicious chilli flavour to the veggie mince, the melty and gooey cheese as well as the crunch from the tortillas and the freshness from the lettuce and tomatoes.  I think next time though, I would add a flurry of jalapenos to spice things up a bit.  We’re chilli fiends though, so if you like yours more mild then stick with the mix that I used below.

So the first one has a bit of a brown (OK, black!) top and that is because I totally forgot to check on it while I was preparing the other wraps.  I actually like the flavour of them slightly charred though.  It kind of gives it that cooked over flame feel  – even though mine are on induction!

I don’t know about you but we like to cram our bank holidays with microadventures (check out my other blog The Urban Wanderer to find out more about those!) so having something quick, tasty and long-lasting on the meal plan for breakfasts is a must.  Who knows when we’ll happen to walk 18 miles a day in the centre of a city…

Although there is a little bit of prep for these they are totally worth the little bit of effort for the deliciousness that follows.

Here’s how to make my copycat veggie Taco Bell Crunchwrap Supreme

Serves 2 (1.5 wraps each)

Ingredients:

3 tortilla wraps

1/2 bag of Quorn mince

1 tbsp ground cumin

1/2 tbsp paprika

1/2 tbsp ground coriander

1 tsp cayenne pepper

1 tsp chilli powder

2 tbsp olive oil

1 large tomato, diced

100 g cheddar, grated

2 inches of Iceberg Lettuce finely sliced

3 slices of burger cheese

3-4 tortilla chips crushed for each wrap

Garlic Sauce

Method:

Heat 1 tbsp olive oil in a frying pan over a medium heat

Add the Quorn mince to the pan and stir to coat in oil

Measure out the spices and add to the mince

Cook stirring occasionally for 5-10 minutes until the mince is cooked and the spices fragrant

Meanwhile, grate the cheddar, dice the tomatoes, slice the lettuce and lay out the tortillas

Spoon the mince equally between the tortilla wraps

Lay the burger cheese over the piles of mince

Crunch the tortilla chips onto the cheese and top with the grated cheddar

Now add the diced tomatoes, garlic sauce and lettuce

Fold around the filling in a circular manner (video to follow shortly if this is challenging)

Heat the remaining oil in the frying pan over a medium to low heat and add the first wrap with the folds down (this helps to seal the goodies inside)

Cook for about 1-2 minutes until golden then turn over and repeat on the other side

Repeat the process with the other wraps and serve

These are great for taking out on picnics too (as we did) as they are easy to eat on the go
