Vegan Sausage, Fried Onion, Rocket and Whole Grain Mustard Sub

Vegan Sausage Sub Sandwich Ingredients:

6 Linda McCartney Sausages

Bag of Rocket, Spinach and Watercress Salad

2 Vegan Sub rolls

4 tbsp Whole Grain Mustard

2 Red Onions, sliced

2 tbsp Pure Soya Spread

 

Method:

Grill the sausages according to the packet instructions, turning regularly

Meanwhile, heat the oil in a frying pan and fry the onions until they soft and tender (approx 5-7 minutes)

Once the sausages are almost done, slice the sub rolls and add them to the grill tray to toast inside

Take the rolls from the grill once they are browned and spread with Pure

Spread Whole Grain Mustard onto the top half of the roll

Add the salad to the bottom of the role, top with (cut in half longways) sausages

Top the sausages with the fried onions

Serve immediately and enjoy!

Full on drooling here. I love those sausages so much! They are my fave of all the vegan brands out there. I haven’t had them like this, though. Bookmarked the page for my dinner on Sunday! MMMM!
