Deliciously simple mushrooms on toast for those days when you want something tasty, quick and are in the mood for the smell of frying mushrooms to fill your house!

I’m by no means saying that this is a complicated dish, but I do like to include some easy go-to recipes that you can come back to again and again for your meal plan – especially when you have a glut of ‘shrooms that need using up.

So yeah, we had been having some rather posh and creative breakfast and brunch meals over the past few weeks and I was running out of ideas for different things for us to have and that was when, while trooping into week 2 of the meal plan, (yep, I went kind of crazy this week!!) we came back to the old skool idea of having simply fried mushrooms on toast.  And you know what, I most certainly don’t regret that decision one little bit – it was AMAZING. It was delicious, the house smelled fantastic and we had a lovely time reminiscing over it while we chowed down.  Now that is a way to spend a weekend morning, wouldn’t you agree?

So here goes!  For that little bit of simplicity in your life, I give to you …Mushrooms on Toast! (and it’s white toast at that!!)

Mushrooms on Toast

Ingredients:

4 slices of white bread, toasted

Pure Spread

200g mushrooms, sliced

25g margarine

Salt and Pepper

Method:

Pop the bread into the toaster ready for toasting (I do two at a time in each toasting area, then after the first toast, swap them around to toast the other side closer to serving time)

Heat a large frying pan over a medium heat and melt the margarine

Add the mushrooms and fry until cooked, adding a little marg if it starts to stick (around 5 – 8 mins)

Toast the other side of the bread and spread with Pure Spread (or spread of your choice)

Season the mushrooms and serve over the toast

Enjoy!  It is as simple as that and you’ll love the results, not matter what!!

For the bread, I used some left overs from a small unsliced loaf that I bought with our weekly Ocado shop – if you look carefully, you can probably see the thin side of one of the slices!  (You can’t get they right every time and to be honest, I think that is what makes self slicing a whole lot better…the rustic feel of it!)

Because of the of the old skool style of this breakfast, I decided to couple it with one of my Nana’s napkins (my favourites ever!) and the forks that I inherited when I moved to uni to bring back even more nostalgia on my part.

PS: This is so quick that you could even surprise your other half with a cheeky breakfast at home before work without having to rush around or gobble it up!

Sometimes all you need is something simple to satisfy your breakfasting needs and mushrooms on toast will not fail to fill that need!
Ingredients
