Everyone loves bread, right?  But not the whole long process of making the dough, waiting for it to rise, doing the second rise, and then baking – that’s boring, especially when you want your loaf ASAP! This is where the super quick recipe comes to the rescue.

You know the story, you plan a meal that has bread to accompany it. You come in from work and ‘oh no!’ the one thing you forgot to buy was fresh bread and you’re really not in the mood for getting changed and venturing out to the shops… So instead of going breadless, you can reach to your store cupboard and grab just four (yes, FOUR!) ingredients and get your bake on! And in less than an hour your home will be smelling like  a bakery with fresh homemade bread just a short time away! Who could say no?

Super Quick Bread

For this Super Quick Bread, you will need:

(based on it serving around 8 portions of bread – nutrition for one portion)

1.5 tbsp dried yeast

1 tbsp agave/honey

400 ml warm water

525 g strong white bread flour

1 tsp salt

Super Quick Bread

 

Method:

Add the Agave and yeast to the water and stir thoroughly, put to the side for around 10 minutes while you prepare everything else (you’re waiting for the mixture  get a kind of foamy top layer)

Weigh our your bread flour and add the salt,

Heat the oven to 204 C

Line a baking sheet with grease proof baking paper

Once the yeast mixture has the foam, add it to the flour and stir to combine

When the dough comes together knead on a floured surface for a minute or two (it doesn’t need a lot) until it comes together in a ball.  Keep adding a little flour at a time if it is too wet or sticking to the surface.

Shape into a loaf shape on the tray, dust with more flour and cover with a towel and put into a warm place (airing cupboard) for 15 mins

Once you have done the rise, remove the towel and slice 1 cm deep cuts into the loaf (I like to do cross ways, but you can just do straight cuts)

Place into the middle of the oven and bake for 20 minutes

Remove from the oven and let cool on a cooling rack

Enjoy smeared with Pure spread or a spread of your choice!

As you can see, I coupled it with my Chickpea, Kale and Tomato Stew for our meal last night and oh how delicious it was!  I am certainly looking forward to the rerun for my lunch today on this snowy Friday!

The thing that I love about this bread is that you can make it after work.  I know that Jit usually misses out on my baking and the glorious smells that it produces as I do most of it while he’s out of the house at work, so it gives him a little treat too.  It really doesn’t take long and for the sake of fresh bread, it is worth the 10 minutes prep time!
