Tomato Feta and Avocado Toastie

Toasties tend to conjure up the image of a grotty toastie maker in the school or college common room or student kitchen, yet I reckon that most of us still have a toastie maker and the great memories of the easy and filling snacks we used to make in them.

Our toastie maker had been hidden for years (mainly because it is annoying to clean once used!) until we recently had a new kitchen installed.  It was our staple diet for the 4 days we were without facilities and made me think about alternatives to cheese and beans.

Jamie Oliver‘s 15 Minute Meals book has some good options and is a great place to start – this is where this one is from!

Tomato, Feta and Avocado Toastie

Tomato, Feta and Avocado Toastie Ingredients:

1 beef tomato, sliced

1 block of low fat feta cheese, sliced

loaf of (as square shaped as possible!) bread, I like wholewheat

1 ripe avocado

 Method:

Place one slice of bread onto each area of the toastie maker*

Place the feta followed by a tomato slice and then slices of avocado

Top with the another slice of bread and turn on your toastie maker

Serve with afresh leaf salad

*If you don’t have a toastie maker, you can make it in the same way either in a George Forman type grill, panini press or under the grill, turning half way through.
