You may remember that I posted my super vegan sausage recipe the other day and promised the homemade vegan sausage roll recipe on the back of it… well here it is!  A little bit later than expected, but in good time for the Christmas parties, get-togethers and meals.  This on is perfect for using some of the sausages that you have frozen off or you can make them straight away like I did.

Of course you could make your own puff pastry, but at this time of year I think every minute of convenience goes a long way.  In this recipe I have used Jus Roll Puff Pastry as I had some in the fridge and it is vegan.

I didn’t want to make just an ordinary sausage roll as I had put so much love into the sausages so I decided to give them a brush with soya milk to get the tops all golden and scatter them with some linseed to give them a little bit of a more fancy and festive look.  I think they added just that little bit more when I was eating them too as you had the deliciously nutty flavour from the seeds adding to the sun dried tomato and herb flavour of the sausage.

Once you have made your homemade vegan sausages, the homemade vegan sausage rolls are a doddle!

Ingredients:

6 vegan sausages

1 pack of Jus Roll Puff Pastry

5 tbsp soya milk

4 tsps linseed (or enough to sprinkle all six sausage rolls

Method:

Preheat the oven to 200 C and line a baking sheet with parchment paper

Roll out the pastry onto the counter and wrap each sausage into the pastry (rolling a little more if you need a bit of extra wrapping space) sealing with a brush of soya milk

Place the rolls onto the baking sheet with the fold at the bottom

Brush with some more soya milk and sprinkle on the linseeds

Place in the oven and bake for 18 minutes until golden and crisp

Enjoy as they are or cut into smaller pieces for sharing on a buffet or lunch table

Because the sausages are so full of flavour you don’t even need dipping sauce for them.  Crispy pastry with flavour packed sausages is just the thing when you’re catering for a lunch or buffet.  Plus, once you have done the sausages, the rest is easy!

I am totally in love with these sausage rolls and am working out when I can fit in making some more for eating at Christmas.  We love taking these homemade vegan sausage rolls on picnics with us – we just have to remember not to run with them because you end up with just sausages and pastry dust.  Which I have to say is delicious in itself, but not quite as pretty or fun!

Looking forward to making more sausages and rolls!
