Herby Feta and Tofu Bake

For an easy dinner, there is nothing quite as simple as a herby feta and tofu bake!  Everything gets chucked together (with a little bit of prep) with some delicious tomato sauce and off you go!  Flavoursome, simple and completely delicious.  To make it vegan, use an extra block of tofu and skip the feta.

This is another one of our favourites that we have been eating for years that I have been yet to share with you.  Not because I don’t want to, just that when we seem to have had it in the past, I was taking a break from Susty’s or we were away or something. Not to worry, the Herby Feta and Tofu bake recipe is here now! Hallelujah!

Herby Feta and Tofu Bake

Ingredients:

3 tbsp olive oil

2 medium onions, diced

4 garlic cloves, minced

1/2 tsp – 1 tsp chilli flakes (we like it spicy!)

2 x 400 g tins of chopped tomatoes

1 block of feta, cut into cubes

1 block of firm tofu, cut into cubes (or rectangles!)

2 tsp of dried oregano

2 tsp dried basil

fresh bread for serving

Method:

  1. Preheat the oven to 180 C
  2. In a large pan, heat the oil
  3. Add the onion and cook until soft and golden, then add the garlic and chilli flakes and cook for about a minute
  4. Pour in the tomatoes and bring to the boil
  5. Add the tofu, oregano and basil to the tomato mixture and leave to simmer for 5 minutes until the sauce thickens up a bit
  6. Place the feta cubes into a casserole or oven proof dish and pour over the tomato mixture
  7. Pop the dish into the oven and bake for 20 minutes
  8. Serve with the crusty bread and enjoy!

I think my love for this dinner came out in the way that I placed the bread – look at the kind of hearts!!  It is such a simple meal that works so incredibly well.  Perfect for during the week.  I reckon (although I haven’t tried it yet) that it would work pretty well in the slow cooker too – but by mixing the feta through or lying it on top of the sauce while it cooks in the day then mixing it through.  When I try it, I’ll let you know!

A bit of a confession on the bread though!  This is a walnut and seed bread purchased (on the cheap at the end of the day from M&S!) I had run out of time and wanted bread in a jiffy (even quicker than my Super Quick Bread) so it had to be done.  That is a tip though, if you’re near an M&S around 6pm, there is often a good chance that you’ll get some good discount on the fresh bread counter!

You know what?  There is no shame in buying dinner bits, we all need a break! And they have delicious bread, it has to be said!

Right, I have lots to do today (I’m making ready meals for my parents!) so I’d best be off!

Herby Feta and Tofu Bake for a nicely tasty and easy mid week dinner with bread or a perfect starter for a group. Make it vegan by replacing the feta with a second block of tofu.
Ingredients
