Copycat Veggie Taco Bell Crunchwrap Supreme

  • 3 tortilla wraps
  • ½ bag of Quorn mince
  • 1 tbsp ground cumin
  • ½ tbsp paprika
  • ½ tbsp ground coriander
  • 1 tsp cayenne pepper
  • 1 tsp chilli powder
  • 2 tbsp olive oil
  • 1 large tomato, diced
  • 100 g cheddar, grated
  • 2 inches of Iceberg Lettuce finely sliced
  • 3 slices of burger cheese
  • 3-4 tortilla chips crushed for each wrap
  • Garlic Sauce
  1. Heat 1 tbsp olive oil in a frying pan over a medium heat
  2. Add the Quorn mince to the pan and stir to coat in oil
  3. Measure out the spices and add to the mince
  4. Cook stirring occasionally for 5-10 minutes until the mince is cooked and the spices fragrant
  5. Meanwhile, grate the cheddar, dice the tomatoes, slice the lettuce and lay out the tortillas
  6. Spoon the mince equally between the tortilla wraps
  7. Lay the burger cheese over the piles of mince
  8. Crunch the tortilla chips onto the cheese and top with the grated cheddar
  9. Now add the diced tomatoes, garlic sauce and lettuce
  10. Fold around the filling in a circular manner (video to follow shortly if this is challenging)
  11. Heat the remaining oil in the frying pan over a medium to low heat and add the first wrap with the folds down (this helps to seal the goodies inside)
  12. Cook for about 1-2 minutes until golden then turn over and repeat on the other side
  13. Repeat the process with the other wraps and serve
  14. These are great for taking out on picnics too (as we did) as they are easy to eat on the go
