Broccoli and Blackbean Burgers

Broccoli Black Bean Burgers are the best way to start the week. Scrap that! they are the best way to start any day! These ones are plump, moist and jam packed with vegan protein. Add your favourite salad bits and condiments to make your perfect burger experience.

Serves: 4
  • 1 small head of broccoli, florets blitzed in a food processor (save the stalk to snack on another time)
  • 2 cups of cooked black beans (I cook 1 cup in my pressure cooker which makes enough)
  • 1 small onion, blitzed in the food processor
  • ½ cup vital wheat gluten
  • 1.2 cup oats,
  • 2 tbsp nutritional yeast
  • 3 large potatoes cut into ½ in chips
  • 1 tsp olive oil
  • 1 tsp smoked paprika
  • Burger buns, salad and condiments of your choosing. We had emmenthal cheese, little gem lettuce, tomatoes and mayo in seeded buns)
  1. Heat the oven to 200 C and prepare a large baking tray for the middle shelf
  2. Blitz the broccoli florets in batches and add to a large bowl
  3. Blitz the onions and add to the same bowl
  4. Add to the same bowl the cooked black beans
  5. Press the black beans into the mixture with the back of a fork, mushing them up and leaving some larger - this gives it a better texture
  6. Add to the mixture the vital wheat gluten, oats and nutritional yeast and mix thoroughly. I find that my hands work for this as you want to kind of knead the mixture to get the gluten working
  7. Divide the burger mixture into four and make into patties, set aside while you prepare your chips
  8. Pop your cut potatoes into a bowl big enough to move them about in
  9. Add the olive oil and smoked paprika and with your hands turn all the chips until they are covered in the spicy mixture
  10. Place the burgers and chips onto the oven tray with space around them
  11. Pop the tray into the oven and bake for 45 minutes, turning the burgers once around half way through
  12. Prepare you buns and salad and serve with your favourite sauces
