Easy Peasy Lemony Guacamole

If you need some guacamole in a hurry – like ready for an unexpected visitor, picnic or bring and share – then this one will be perfect for you.  the easy peasy lemony guacamole is absolutely deliciously creamy with just the right balance of tangy lemon with warming chill – and you whip it up in a small food processor so it is super-duper quick too.  I’m all for the funny words today, obviously!

So here we have it…

Ingredients:

2 large very ripe avocados, stoned and flesh scooped out

2 red chillies, chopped

1/2 cup lemon juice

Pepper to taste

Method:

Cut the chillies into chunks and pop into the food processor, followed by the avocado flesh and the lemon juice

Blitz until creamy and blended (you’ll see that the chillies are chopped and spread through the green mixture)

Add a little more lemon if it is too stiff for the blades to move and mush any remaining big bits of avocado with a fork once you’re done

And there you have it!  Easy peasy lemony guacamole… just like that!

This really is a great way to use up cheap or left over avocados and you can also use squishy chillies too as they will be fine and look totally different when blended into the guacamole (so it’s win-win-win with quick, easy and uses food that might go to waste!)

Chuck it in a bowl to eat with tortilla chips or top a burger or tortilla wrap for that Mexican style.

Quick, easy and delicious, easy peasy lemony guacamole can be blitzed up in an instant ready for that unexpected guest, picnic or bring and share dinner.
Ingredients
