If you have ever had the opportunity to try the Udo snacks that you can buy in many Chinese supermarkets, you will know just how amazing crispy nori shacks can me.  Unfortunately, I don’t always get to China Town or Wing Yip so I thought it would be useful to be able to make my own.  And also, it is a fantastic way to use up any open and unused packets of nori sheers (you know from the remains of a sushi session or from wrapping your tofu ‘fish’)

I have a chubby cat in the family and today I received our new SureFeed microchip reading feeder so that I can let the older five of the six cat crew eat throughout the day while making sure that Tikka (the chubby one) keeps to her diet and so they have been enjoying treats all day.  Which, I think is why my mind has been on snacking too and all I really wanted was something crispy, salty and delicious (none of which we keep in the house! lol)

And that was when I remembered crispy nori snacks and that was that!

Here is how you do it! (ingredients for this batch)

Ingredients:

3 sheets of nori, cut into rectangles

2 tbsp toasted sesame oil

Freshly ground sea salt (I use salt with seaweed)

Crispy Nori Snacks

Method:

Preheat the oven to 150 degrees Celsius

Brush the nori pieces with the oil on both sides and place onto a baking sheet

Continue until you have either filled two trays or you run out of nori

Sprinkle the sheets with a light amount of freshly ground sea salt

Place in the oven, middle and bottom shelf, and bake for 15-20 minutes until crisp

Let them cool and then store in an airtight container

Perfect healthy snacks that easily take the place of crisps.  Warning though, they are SUPER moreish.

And that was that.  My snack craving has now been curbed by just 4 sheets of toasted nori and the cats are still enjoying their feeder (well, except Molly who I think will take some time to get used to it, she’s a bit skittish!)

So here’s to healthy snacking and using up leftovers in the process.

Have a go and let me know how you get on!  If you want to vary it a bit, sprinkle the noti with wasabi powder or mix the wasabi into water and oil then paint onto the sheets for a spicy variety. Alternatively do them plain for a roasted flavour.  The world is your oyster with these and they are so easy and quick that you can experiment with all sorts of variations.

A deliciously moreish snack that uses up left over nori sheets. Quick and easy to make and perfect for a salty snack when you’re trying to stay off the crisps.
