Broccoli and Black Bean Burgers

Burgers! If you know anything about me, you will know that I am a burger addict (Jit is too!) and my mission in life is to create the best veggie and vegan burgers known to mankind!  These vegan Broccoli and Black Bean Burgers, I have to say, are pretty high up on my list of amazing ones and it is jam-packed with protein and flavour. Plus, they are amazing cold the next day too.

I have no idea where the idea came from, but when I was doing the meal plan the other week, I just fancied doing some broccoli burgers of some kind and doing it with black bean seemed like the most alliterated option.  Not only do they taste good, but they sound good too!  They are easier than you think to make as well because you can blitz things up in your food processor (I used my small Kenwood one)

The best thing about this meal is that you can cook both the burgers and the chips at the same time for perfect results without a lot of faff or washing up.  I certainly love dinners like that – even though I don’t do the washing up. 😉

There are some special ingredients in this burger like Vital Wheat Gluten and Nutritional Yeast, but if you’re getting into making your food at home from fresh and will be trying out my (soon to come) seitan recipes, then getting some in would be a good shout.

These burgers are moist, stick together and perfectly plump making them filling and also big enough to fill the bun.  Don’t you hate it when you have loads of bread and very little burger?

Broccoli Black Bean Burgers

Ingredients:

1 small head of broccoli, florets blitzed in a food processor (save the stalk to snack on another time)

2 cups of cooked black beans (I cook 1 cup in my pressure cooker which makes enough)

1 small onion, blitzed in the food processor

1/2 cup vital wheat gluten

1.2 cup oats,

2 tbsp nutritional yeast

3 large potatoes cut into 1/2 in chips

1 tsp olive oil

1 tsp smoked paprika

Burger buns, salad and condiments of your choosing.  We had Emmenthal cheese, little gem lettuce, tomatoes and mayo in seeded buns

Method:

Heat the oven to 200 C and prepare a large baking tray for the middle shelf

Blitz the broccoli florets in batches and add to a large bowl

Blitz the onions and add to the same bowl

Add to the same bowl the cooked black beans

Press the black beans into the mixture with the back of a fork, mushing them up and leaving some larger – this gives it a better texture

Add to the mixture the vital wheat gluten, oats and nutritional yeast and mix thoroughly.  I find that my hands work for this as you want to kind of knead the mixture to get the gluten working

Divide the burger mixture into four and make into patties, set aside while you prepare your chips

Pop your cut potatoes into a bowl big enough to move them about in

Add the olive oil and smoked paprika and with your hands turn all the chips until they are covered in the spicy mixture

Place the burgers and chips onto the oven tray with space around them

Pop the tray into the oven and bake for 45 minutes, turning the burgers once around half way through

Prepare you buns and salad and serve with your favourite sauces

Everything came out just as I had hoped and they were almost better the next day too!

I often make burgers when either Jit or I are going on a train trip as they are easy to package up and take with you as well as a lovely treat to have on the train.  You should see some of the envious looks we get when pull these out in comparison to the £10 soggy sandwiches. (to be fair, it has been so long since I have eaten train food that I can’t really judge)

TIP! When you’re packaging up your burger for the next day, make sure that you slip the tomato between two waterproof layers to make sure that your bread doesn’t get soggy.  In this burger, I used some burger cheese and the lettuce to protect the bun.

I always prepare my burgers in the same way as I do for Jit, even though I am at home.  It makes lunching so much easier and if I do decide to go out to work somewhere or go on a walk or a hike, I can just pick up my lunch and go for it.  So much simpler than preparing lunch twice (once in the morning for Jit and then again at midday for me)

Broccoli Black Bean Burgers are the best way to start the week. Scrap that! they are the best way to start any day! These ones are plump, moist and jam packed with vegan protein. Add your favourite salad bits and condiments to make your perfect burger experience.
